Creamy Gazpacho

Creamy Gazpacho


Preparation:

This make-ahead low-calorie chilled soup is perfect for your garden party menu.








You will need:

3 cups tomato juice 750 ml
1 can (28 oz/796 ml) diced tomatoes, undrained 1
1 can (370 ml) fat free evaporated milk  1
1/4 cup lemon juice 50 ml
2 tbsp olive oil 30 ml
2 cloves garlic, minced 2
1 tsp each salt and black pepper 5 ml
2 medium English cucumbers, chopped 2
1 medium green pepper, chopped 1
1 small onion, chopped 1

Tools required:
Large bowl, food processor or blender

Step 1:
Stir together tomato juice, tomatoes, evaporated milk, lemon juice, olive oil, garlic, salt, and pepper in large bowl.

Step 2:
Transfer, in batches, to food processor or blender; process until smooth.  Pour back into bowl.

Step 3:
Stir in cucumbers, green pepper and onion.  Refrigerate until chilled.

Makes 10 servings

Nutrients per serving: about 100 Calories, 4 g Protein, 3 g Fat, 14 g Carbohydrate, 130 mg Calcium (10% Daily Value for calcium)

Good To Know:  Evaporated milk is creamier than regular milk.  Not only does it have half the fat of coffee cream, light cream and heavy cream, it also has more than double the calcium and protein, making it a good replacement for cream.
