This make-ahead low-calorie chilled soup is perfect for your garden party menu.
You will need:

can (370 ml) fat free evaporated milk |

medium English cucumbers, chopped |

medium green pepper, chopped |

small onion, chopped |

Tools required:
Large bowl, food processor or blender
Step 1:
Stir together tomato juice, tomatoes, evaporated milk, lemon juice, olive oil, garlic, salt, and pepper in large bowl.
Step 2:
Transfer, in batches, to food processor or blender; process until smooth. Pour back into bowl.
Step 3:
Stir in cucumbers, green pepper and onion. Refrigerate until chilled.

Good To Know: Evaporated milk is creamier than regular milk. Not only does it have half the fat of coffee cream, light cream and heavy cream, it also has more than double the calcium and protein, making it a good replacement for cream.
