Tomato & Marinated Zucchini Salad

Preparation: 20 min    Marinating:  30 min

Serve this refreshing salad with crusty Italian bread. If preparing this recipe for company, try pairing it with NESTEA Sangria.

 


 

You will need:
3 medium zucchini 3
1 juice & zest of a lemon 1
coarse salt & freshly ground pepper
4 medium vine-ripened tomatoes 4
2 tbsp extra virgin olive oil 30 ml
fresh chives
                 
Step 1:
Thinly slice zucchini lengthwise using a large vegetable peeler or a mandolin; place in a shallow dish.  Add lemon juice, zest, salt and pepper; cover and marinate for 30 minutes at room temperature.

Step 2:
Slice each tomato into 4 slices and place around the outer edge of a platter, cover and set aside.

Step 3:
Just before serving, remove zucchini from dish and place in middle of platter; pour olive oil over tomato slices.  Garnish with chives and serve immediately.

Makes 8 servings

Nutrients per serving (per 2 tomato slices): about 40 calories, 0 g protein, 3.5 g fat, 2 g carbohydrate, 8 mg vitamin C (15% Daily Value for vitamin C).
