Savoury Bean and Spinach Salad

This vegetarian salad can be served on its own or pair it with a DELISSIO pizza for a meal the whole family can enjoy!

 

 


You will need:

2 cans (19 oz / 540ml) mixed beans, drained & rinsed 2
1/2 cup stuffed green olives, quartered 50 ml
1 small red onion, sliced 1
2 garlic cloves, minced 2
2 cups baby spinach leaves, washed & dried 500 ml
1 1/2 cups crusty Italian- style bread,cut into bite-size cubes 750 ml 
3 tbsp extra virgin olive oil 45 ml
2 tbsp red wine vinegar  30 ml

Step 1:
Gently toss beans, olives, onion and garlic in bowl or on platter.

Step 2:
Add spinach, bread cubes, olive oil and red wine vinegar, salt and pepper to taste.  Toss lightly to mix.

Step 3:
Just before serving (if desired) garnish with freshly chopped parsley or grated Parmesan cheese.

Makes 8 servings

Nutrients per serving (per 3/4 cup/175 ml): about 250 calories, 11 g protein, 8 g fat, 36 g carbohydrate.
