Savoury Bean and Spinach Salad

This vegetarian salad can be served on its own or pair it with a DELISSIO pizza for a meal the whole family can enjoy!
You will need:

(19 oz / 540ml) mixed beans, drained & rinsed |

stuffed green olives, quartered |

small red onion, sliced |

baby spinach leaves, washed & dried |

crusty Italian- style bread,cut into bite-size cubes |
750 ml |
| 3 tbsp |
extra virgin olive oil |

| 2 tbsp |
red wine vinegar |
30 ml |
Step 1:
Gently toss beans, olives, onion and garlic in bowl or on platter.
Step 2:
Add spinach, bread cubes, olive oil and red wine vinegar, salt and pepper to taste. Toss lightly to mix.
Step 3:
Just before serving (if desired) garnish with freshly chopped parsley or grated Parmesan cheese.
Makes 8 servings
