Greek-Style Brown Rice Salad

Greek-Style Brown Rice Salad

Preparation: 20 min     Chill:  2 hours

A delicious twist on the traditional Greek salad. Eat as a main course or pair it with SAUTÉ SENSATIONS Mediterranean Chicken to create a quick meal for the family.

 

 

You will need:

Salad:

2 cups instant brown rice, cooked 500 ml
1 cup grape tomatoes, halved 250 ml
2 green onions, chopped 2
1/2 english cucumber, chopped 1/2
1/2 green pepper, chopped 1/2
1/2 cup sliced black olives 125 ml
1/2 cup feta cheese, cut into small cubes 125 ml

Dressing:

1/2 cup mayonnaise 125 ml
1/4 cup plain yogurt 50 ml
2 tbsp freshly squeezed lemon juice 30 ml
salt and freshly ground pepper

Step 1:
Combine rice, vegetables, olives and cheese in a large bowl.

Step 2:
Whisk dressing ingredients together in a small bowl and toss with salad ingredients; season with salt and pepper to taste.

Step 3:
Cover and refrigerate for 2 hours to blend flavours.

Makes 8 servings

Nutrients per serving (per 1/2 cup/ 125 ml): about 180 calories, 5 g protein, 8 g fat, 22 g carbohydrate.

Nestlé Kitchens Tip: White rice or couscous can be substituted for brown rice.

Good to Know:  Brown rice is a whole grain. Canada’s Food Guide recommends making at least half of your grain products, whole grains every day.
