Creamed Spinach with Tomato

Here's an easy flavourful side dish that makes a great accompaniment to prime rib, pork chops or veal.
You will need:

small onion, diced |

each salt and Italian seasoning |

package (10 oz/ 300 ml) frozen chopped spinach, slightly thawed |

| 1 cup |
drained diced canned tomatoes |
250 ml |
| 1/3 cup |
regular evaporated milk |
75 ml |
| 1/4 cup |
whipping cream |
50 ml |

Non-stick skillet
Step 1:
Heat oil in non-stick skillet over medium-high heat. Sauté onion, salt and Italian seasoning about 3 minutes or until softened.
Step 2:
Add spinach, breaking up with wooden spoon. Cook 5 minutes or until most of the liquid is evaporated.
Step 3:
Stir in tomatoes, evaporated milk and cream; cook, stirring occasionally, about 10 minutes or until thickened. Serve immediately.
Makes 4 servings.
