Creamed Spinach with Tomato

Here's an easy flavourful side dish that makes a great accompaniment to prime rib, pork chops or veal.













You will need:

1 tbsp vegetable oil 15 ml
1 small onion, diced 1
1/2 tsp each salt and Italian seasoning 2 ml
1 package (10 oz/ 300 ml) frozen chopped spinach, slightly thawed 1
1 cup drained diced canned tomatoes    250 ml
1/3 cup regular evaporated milk 75 ml
1/4 cup whipping cream 50 ml

Tools Required:
Non-stick skillet

Step 1:
Heat oil in non-stick skillet over medium-high heat.  Sauté onion, salt and Italian seasoning about 3 minutes or until softened. 

Step 2:
Add spinach, breaking up with wooden spoon.  Cook 5 minutes or until most of the liquid is evaporated.

Step 3:
Stir in tomatoes, evaporated milk and cream; cook, stirring occasionally, about 10 minutes or until thickened.  Serve immediately. 

Makes 4 servings.
