Creamy One-Pot Mac and Cheese

This comfy one-pot meal takes just a bit longer to prepare than boxed varieties and tastes so much better.  













You will need:

6 cups scoobi doo or rotini pasta 1.5 L
1 can (370 ml)  2% evaporated milk 1
3 tbsp all-purpose flour 45 ml
3/4 tsp salt 4 ml
1/2 tsp dry mustard 2 ml
1/4 cup light cream cheese 50 ml
2 cups shredded old Cheddar cheese 500 ml
black pepper, optional

Tools Required:
Large saucepan

Step 1:
Cook pasta according to package directions; drain and set aside.

Step 2:
Stir together evaporated milk, flour, salt and mustard in large saucepan.  Add cream cheese; cook over medium-high heat, stirring, for about 5 minutes or until just boiling and slightly thickened. 

Step 3:
Remove from heat; stir in Cheddar cheese until melted.  Stir pasta into cheese sauce; serve immediately. 

Makes 6 servings.

Nestlé Kitchens Tip: For a Mexican twist, brown 1 lb (500 g) lean ground beef in skillet; drain fat if necessary.  Add beef to above recipe along with 1 cup (250 ml) of your favourite salsa.

Good to Know:  Increase your daily vegetable intake by tossing your favourite steamed veggies into this recipe.
