Caramel Nut Bouchée

Preparation: 15 min Chill: 1 hour + 2 hours

If you like the idea of homemade candy but not the work involved, these luscious soft caramels are the perfect party solution - especially during the busy holiday season.

 


You will need:
1 pkg MACKINTOSH’S MACK Toffee candy, unwrapped 1
2 tbsp evaporated milk 30 ml
1 tsp butter 5 ml
1/2 cup coarsely chopped pecans 125 ml
1/4 cup coarsely chopped hazelnuts 50 ml
1/4 cup toasted chopped almonds or pine nuts 50 ml
2/3 cup finely chopped pecans  150 ml
2 tbsp honey 30 ml
1 tsp water 5 ml
 
Step 1:
Place toffee pieces in 4 cup (1 L) microwaveable glass measure or bowl. Add evaporated milk and butter. Microwave on high 1 1/2 -2 min or until bubbling vigorously. Stir until smooth.

Step 2:
Stir in coarsely chopped pecans, hazelnuts, and slivered almonds. Refrigerate for 1 hour or until chilled and firm enough to handle. Do not reheat.

Step 3:
Microwave honey and water for 10 seconds or until smooth. Roll slightly rounded teaspoonfuls (5 ml) into small balls; roll in honey mixture and then into finely chopped pecans. Place in small foil or paper candy cups; refrigerate for 2 hours or until firm. Serve at room temperature.

Makes 25 candies.
