Caramel Almond Bites

Caramel Almond Bites

Preparation: 15 min Chill: 1 hour

A cross between a candy and a cookie, these delicious caramel confections are sure to become a favourite. To add to the visual appeal, use a mix of toasted and untoasted almonds.

 


You will need:

25 square graham crackers

2 pkgs (170 g each) MACKINTOSH’S MACK Toffee candy, unwrapped 2
2 tbsp evaporated milk 15 ml
2 tsp butter 10 ml
3/4 cup toasted sliced almonds 175 ml

Step 1:
Line a rimmed baking sheet with wax paper, leaving overhang over edges. Arrange graham crackers over bottom, cutting with serrated knife to fit and minimizing any gaps between crackers. Set aside.

Step 2:
Place toffee pieces in a 4 cup (1 L) microwaveable glass measure or bowl. Add evaporated milk and butter; microwave at High for 3 minutes or until bubbling vigorously. Stir until smooth.

Step 3:
Pour over graham crackers, spreading as evenly and as close to cracker edges as possible without going over edges. Sprinkle almonds evenly over top; press in gently. Refrigerate for 1 hour or until firm. Let come to room temperature before serving.

Step 4:
Grasp wax paper and lift from pan. Using sharp knife, cut into 1.5 x 2 inch (4 x 6 cm) pieces; peel off wax paper.

Makes 24 pieces.
