White Bean Bruchetta

White Bean Bruschetta

Preparation: 15 min    

A twist on an Italian classic. For a complete appetizer presentation, serve with PERRIER Party Punch.

 

 


You will need:

1 prepared recipe of the grilled garlic bread 1
1 (540 ml) can white kidney beans, drained & rinsed 1
1/4 cup extra virgin olive oil 50 ml
1 garlic clove, minced 1
1-2 tbsp water, optional 15-30 ml
2 tbsp minced fresh sage 30 ml
coarse salt & freshly ground black pepper
sage & strips of sundried tomato

Step 1:
Place prepared bread on a large platter for serving.

Step 2:
Place kidney beans, olive oil and garlic in food processor; process until the mixture is a spreadable paste. (If necessary add 1-2 tbsp of water if mixture is too thick).

Step 3:
Remove mixture from food processor placing in a bowl; stir in sage and salt and pepper to taste.  Divide prepared mixture evenly among bread slices; garnish with additional sage and strips of sundried tomatoes.

Makes 24 servings

Nutrients per serving (per 1 slice): about 130 calories, 4 g protein, 7 g fat, 13 g carbohydrate.

Good to Know:
Kidney beans are low in fat and are a source of calcium. Canada’s Food Guide suggests eating these meat alternatives often.
