Brie and Leek Tarts

You will need:

18 frozen 2-inch (5 cm) Mini Tart Shells 18
1/4 cup butter 50 ml
1 medium leek, cleaned & finely chopped 1
1 garlic clove, minced 1
1/2 pkg (227 g) spreadable cream cheese 1/2
1/4 tsp nutmeg 1 ml
dash  salt & freshly ground pepper Dash
1 (pkg (120 g) brie cheese, cut into small cubes to fit inside tart shells 1
sprigs of fresh thyme, for garnish 

Step 1:
Preheat oven to 375º F (190º C).  Remove tart shells from packaging and place on a baking sheet.

Step 2:
Melt butter in frying pan, stir in leeks and garlic; sauté until leeks are tender (about 5-10 minutes). Stir in cream cheese until melted and mixture is well blended.

Step 3:
Season mixture with salt, pepper and nutmeg to taste.  Divide cubes of brie evenly among tart shells; fill tart shells with leek mixture.

Step 4:
Bake tarts for 20 minutes or until golden brown.  Remove from oven and cool slightly, then serve with a spring of thyme.

Makes 18 servings

Nestlé Kitchens Tip: For a spicy version of the above recipe; add 1/4-1/2 tsp (1- 2 ml) of cayenne pepper to the filling mixture.
Good to Know:  One cup of leeks is an excellent source of Vitamin C as well as a source of iron and fibre.  One cup (250 ml) of raw chopped leeks contains 57 calories.
